Tim,

Thanks for the recipes, they sound great.

Just a word of caution for the new to SCD - make sure your bacon is legal. Most bacons are cured with some non-honey sweetener.

Also becareful with pimento. I had to investigate to learn what it really is. Fresh pimento is a variety of chili pepper and in it's fresh state would be legal. Processed pimento may be illegal. The wikipedia entry explains that the pimento stuffed into olives most likely contains a gum, making it SCD illegal. Here's your link: http://en.wikipedia.org/wiki/Pimento

Mock French (Mustard) Dressing

Want a great SCD Salad dressing. Boil / cook 2 small bags of carrots until soft. Drain, rinse in cool water, place in frig until cold. I usually add ice to speed the process. When cool, drain off an water (if placed in ice) and puree all the carrots. Add yellow mustard, apple vinegar, celery, onion, pimentos, salt & pepper to taste. Mix well and refrigerate. This makes a great tasting salad dressing. Is always better on day 2 & 3.

Want a great egg salad. Add about 7-8 hard boiled and lightly pureed eggs. Yummm. Also great on a lettuce salad.

Top salad with toasted almonds or crunchy bacon... Wow, out of this world.

You can add some honey to dressing, but all the carrots are sweet enough for me.

You can also add some olive oil to the carrots when pureeing them, but have I come to like it without.

Happy experimenting.
