tomato and garlic relish

Wanting a quick substitute for ketchup, I came up with this recipe. It’s fresh, it’s zingy, it’s quick. I bet it would be good on fish too. The pureed garlic gives it a surprising heat.

Ingredients:
1 medium, ripe tomato, diced
1 clove of garlic, pureed (see this video for easy peeling)
salt
black pepper, freshly ground

Directions:
Combine ingredients, mix and taste.
Adjust seasonings if necessary.
