Paul Collins

A very refreshing summertime drink. I highly recommend giving it an try. This cocktail is an adaptation of a John Collins which is a variation of the Tom Collins.

Ingredients:
1 shot of bourbon
Four ounces (half cup) of lemonade concentrate
Seltzer or sparkling water
Ice

Directions:
1. Make lemonade concentrate by combining equal parts lemon juice and honey.
2. In a tall glass mix lemonade concentrate with bourbon.
3. Fill glass to 3/4 full with seltzer water.
4. Add ice.
5. Imbibe.

Notes:
Goes down easy.

    I though bourbon is made from grain and toxic for celiacs

      Dawn,

      I’m don’t have celiac and don’t know anything about toxicity.

      Quoting from the BTVC book, I do know that hard liquors like “gin, rye, Scotch, bourbon, vodka, etc.” are allowed occasionally. See page 80 in chapter 10 under the alcoholic beverages heading. My presumption is that these are gluten-free.

    Jack Daniels is gluten free as is Croc Vodka, it’s made from grapes. You just have ot inquire. Jack Daniels and others is usually made from a mash, but, goes through a fermentation process which in essence is ‘safe’ for celiacs, etc..

    When in doubt call the manufacturer!
